A bright Levantine parsley and bulgur salad with mint, tomato, cucumber, scallions, lemon, olive oil, and warm spices. It is fresh, zesty, and perfect as part of a appetizer spread.

Story
Tabbouleh is one of the most loved salads across the Levant. It is herb-forward, refreshing, and often served with hummus, pita, falafel, grilled foods, or other appetizer dishes.
Method

Cook the bulgur according to package directions, then let it cool completely.

In a large bowl, whisk together the olive oil, lemon juice, garlic, salt, coriander, and cinnamon.

Add the parsley, cucumber, tomato, cooled bulgur, mint, and scallions.

Toss everything together until the herbs and vegetables are evenly coated.
